A pure sherry cask. This Limited Release underwent final maturation in an exquisite 300L premium Pedro Ximénez sherry cask from Dutchske Wines in the Barossa, following its initial aging in rare Australian McWilliams Apera sherry casks.
Nose: The aroma presents spiced apples, cinnamon, and nutmeg, complemented by abundant brown sugar and dates, all transformed into a thick, resinous jam and lavishly draped over a hot apple pie.
Palate: The whisky exhibits profound complexity. The initial intensity from its higher proof gradually yields to a sumptuous, oily, and rich spirit. The influence of the 21-year-old PX sherry cask becomes prominent. The palate mirrors the nose, enhanced by a touch of homemade custard.
Finish: The finish is enduring, characterized by lingering notes of dates and raisins.
